Paleolithic Expansion: On the Road to Napa Valley

The paleolithic expansion continues to the Napa Valley. Over the next few days the paleo-tribe will be dining, and maybe wining, through some of the nicest restaurants and vineyards in the country.

Which brings us to a good point. The strict paleo-diet is alcohol free. How shall we cope? My position is that it depends on how you view alcohol; as a food, which would be the European perspective, or as nutritionally useless. which might be the view of modern fitness trainers, coaches and hardcore fitness buffs.

I resolved it as so: I am on vacation so I will assume the former.

Over the next few days we will be checking out the French Laundry, Dry Creek, Auberge du Soleil, Ubuntu and many other Napa eateries.

As an hommage to the Napa valley and its contribution to modern gastronomy, we will leave you with a Nape salad recipe, modded out for the Modern Savage.

Recipe: Napa Salad – Paleo Style

Ingredients

    3 tbsp apple cider vinegar
    2 tbsp maple syrup
    1 tbsp soy sauce
    1 tbsp sesame seed oil
    Salt and pepper to taste

    1 small Napa cabbage
    2 carrots, peeled
    1 fist-full of unsalted, roasted almonds

Instructions

  1. In a small saucepan, add all the liquids and salt and pepper to taste. Bring to a boil and whisk. Remove from the heat and let cool to room temperature.
  2. Remove any wilted outer leaves from the Napa cabbage. Using a chefs knife, create thin, slaw like shavings by shaving along the length of the cabbage. Wash and spin the cabbage and place in a salad bowl.
  3. Using a chefs knife, loosely chop almonds and set aside in a bowl.
  4. Cut the carrots into thin 1 inch julienne strips. Add the carrot strips to the salad bowl.
  5. Pour the cooled dressing over the salad and toss. Chuck in the crushed almonds, toss again and serve.

    2 to 4 servings, depending on cabbage size each serving ~ 320 Cals
